Jollof Rice

 Jollof Rice preparation

Step 1: Turkey and beef preparation

Place concentrated turkey, chicken, or beef in a pot, add seasonings: chopped onion, curry leaves, fresh thyme, scotch bonnet, bullion cubes, salt, curry powder, and garlic powder.

Mix well with a little water and heat for 15-20 minutes, then transfer to a bowl, avoiding overcooking to prevent softness.

Step 2: Stew preparation

– Ingredients: peppers (scotch pepper, bell pepper, shombo peppers), onion, garlic, Chop peppers, tomatoes, and onion. After providing these ingredients, slice garlic and roast in a preheated oven for 40 minutes or pan-fry on low heat for 30-35 minutes then Blend pepper, garlic, and ginger.

Step 3: Frying turkey and beef

Heat oil and add onion, thyme leaves, and garlic for flavour, add turkey and  beef till its brown for 10-15 minutes then transfer to a bowl

Step 4: Jollof rice preparation

Add chopped onion and tomatoes paste to oil used for frying meat; fry for 16 minutes or until sweet also add pepper mix and adjust thickness with oil if needed. Instantly, add seasonings: thyme, white pepper, curry powder, bullion cubes, salt, and bay leaves; fry for 40-45 minutes.

Finally, Add boiled rice and mix well; cooking time varies by rice type (e.g., Basmati rice: 20 minutes) then garnish with butter or margarine, onion, and fresh tomatoes; heat for 15 minutes.

Egusi Soup

Egusi soup is a thick and tasty soup made with melon seeds and vegetables. This soup is owned by the Igbos , it is a general soup for all Nigerians. This cuisine can be served with fufu or rice. Egusi Soup Recipe

Step 1: Boil meat and prepare ingredients

Boil goat meat, beef, shaki, and bokoto (cow leg) in a pot with; Chopped onion, Stock cubes, Scotch and bonnet peppers and Salt. Add a small amount of water and boil for 20 minutes. Then, grill the boiled meat for 20 minutes at 460°C (optional: boil or fry).

Step 2: Prepare pepper mix and egusi paste

To Blend your pepper mix add Onions, Scotch peppers and Bell peppers together. Afterwards, blend Egusi seeds with crayfish powder, warm water, and palm oil until fine, to get a thick paste.

Step 3: Cook locust beans and meat

Soak smoke fish and locust beans in hot water for a minute, then wash off. Fry locust beans and meat in palm oil with the following ingredients: onion, Crayfish powder, pepper mix, Stock cubes, Smoked fish and Salt.

Step 4: Prepare vegetable leaves

Wash and slice the vegetable leaves note; you can use ugu leaves, fluted pumpkin , uziza leaves etc Meanwhile we are using ugu leaves. Soak the leaves in hot water for 2 minutes to remove dirt and avoid upset stomach. Then, wash and slice the leaves again, and set them aside for later use.

Step 5: Add egusi paste and vegetable leaves

Finally, add the egusi paste to the meat mixture and stir well. Also, add the sliced ugu leaves (or other vegetable leaves) , crayfish and meat stock. Cover it and cook for 10-15 minutes on low to medium heat.

Step 6: Serve and enjoy

Serve the egusi soup with swallow or rice.

Akara

Akara is a Nigerian fried bean cake made with beans and spices. Ingredients:

These are the following ingredients needed; 4 cups of black eye peas or brown beans , Spring onion ,Bell pepper, Habanero pepper, egg ,salt, water and Vegetable oil for frying.

Steps 1 preparation 

Soak the beans in water for 1 hour, afterwards clean your beans for the skin to fall off easily. Soak again for 1 hour to soften it and blend with pepper, little water, onions and salt. Don’t forget to whisk it till it’s light. Afterwards, heat an oil in frying pan and prepare your chopped onion and pepper, add it to the blended beans and stir.

Mix salt and egg to blended beans, chop your onions and bell pepper and mixed to the blended beans . Then, Fry in the hot oil till it’s brown.
