Jollof Rice preparation
Step 1: Turkey and Beef Preparation
– Place concentrated turkey, chicken, or beef in a pot
– Add seasonings: chopped onion, curry leaves, fresh thyme, scotch bonnet, bullion cubes, salt, curry powder, and garlic powder
– Mix well with a little water and heat for 15-20 minutes
– Transfer to a bowl, avoiding overcooking to prevent softness

– Ingredients: peppers (scotch pepper, bell pepper, shombo peppers), onion and garlic
– Chop peppers, tomatoes, and onion; slice garlic and roast in a preheated oven for 40 minutes or pan-fry on low heat for 30-35 minutes

Egusi Soup Recipe
Step 1: Boil Meat and Prepare Ingredients
Boil goat meat, beef, shaki, and bokoto (cow leg) in a pot with the following seasonings:
– Chopped onion
– Stock cubes
– Scotch and bonnet peppers
– Salt
Use a small amount of water and boil for 20 minutes. Then, grill the boiled meat for 20 minutes at 460°C (optional: boil or fry).
Step 2: Prepare Pepper Mix and Egusi Paste
Blend the following ingredients to make the pepper mix:
– Onions
– Scotch peppers
– Bell peppers
Next, blend Egusi seeds until fine. Mix with crayfish powder, warm water, and palm oil to create a thick paste.
Step 3: Cook Locust Beans and Meat
Smoke fish and locust beans in hot water for a minute, then wash off. Fry locust beans and meat in palm oil with the following ingredients:
– Onion
– Crayfish powder
– Pepper mix
– Stock cubes
– Smoked fish
– Salt
Step 4: Prepare Vegetable Leaves
Wash and slice the vegetable leaves (you can use ugu leaves (fluted pumpkin) , uziza leaves etc) note that we are using ugu leaves. Soak the leaves in hot water for 2 minutes to remove dirt and avoid upset stomach. Then, wash and slice the leaves again, and set them aside for later use.
Step 5: Add Egusi Paste and Vegetable Leaves
Add the egusi paste to the meat mixture and stir well. Then, add the sliced ugu leaves (or other vegetable leaves) , crayfish and meat stock. Cover and cook for 10-15 minutes on low to medium heat.
Step 6: Serve and Enjoy
Serve the egusi soup with swallow or rice.

Step 1: soak the beans in water for 1 hour, for the skin to fall off easily.
